Aji and Arcane join forces for a gastronomic lineup at MGM

MGM will present an exclusive four-hands dining experience on May 9 and 10 as part of its ‘Gastronomic Journey with Star Chefs’ series.

Chef Pan Sihui of Aji at MGM Cotai and Chef Shane Osborn of Hong Kong’s Arcane will collaborate for the first time, blending French technique with Asian influences and a focus on seasonal produce.

The chefs will present a six-course lunch and an eight-course dinner featuring signature creations such as Antarctic Toothfish, Kinki Fish, and 7+ Mayura Wagyu Rump Cap.

A unique sauce combining Singaporean Sambal Jam and Australian Vegemite will feature across both menus.

To showcase the innovative “Asian Bistronomy” concept of Aji, Chef Pan will also create his very own King Pigeon dish which combines the French culinary technique of ballotine (deboning poultry) and the Cantonese hang-dried technique of creating crispy skin.
