As part of the recent Star Chefs Discovery Journey gastronomic event, Chef Tam is bringing two handcrafted nostalgic flavors with a creative twist exclusively to Chún at MGM COTAI for a limited time.

The Pan-fried Fish Maw with Conpoy, Bean Sprout, and Egg, is a culinary masterpiece highlighting Chef Tam’s impeccable skill of utilizing “Wok Chi”, the essence of Cantonese cuisine. The dish features scrambled egg shaped like osmanthus flowers, pan-fried to a lustrous golden hue. The interplay between the aroma of eggs and the tantalizing texture of the fish maw creates a delectable and refined experience, showcasing the artistry of precise temperature and time control, offering both visual and gustatory pleasure.

The Steamed Mud Crab with Huadiao Wine features the finest seasonal mud crab from the Pearl River Delta Region. Chef Tam handpicks the crab meat and extracts the roe, steamed with 20-year-aged ‘Nu Er Hong’ rice wine to elevate and accentuate the natural sweetness and umami flavors. The homemade glass noodles infused with red dragon fruit juice absorb all of the rice wine crab broth, making it a subtle and unforgettable delicacy.
