Galaxy Macau has appointed Italian chef Marino D’Antonio as the new executive chef of 8½ Otto e Mezzo BOMBANA, a Michelin one-star restaurant.
Chef Marino, known for his experience in Michelin-starred establishments, previously collaborated with Chef Umberto Bombana to open Opera Bombana in Beijing.
To mark his appointment, Chef Bombana and Chef Marino will host a special dinner on February 26 and 27, featuring a menu that highlights seasonal ingredients such as Hokkaido King crab, Périgord black truffle, and Mayura beef.
Chef Marino also plans to introduce new signature dishes, including Veal and Ham Agnolotti and Marinated Langoustine with Oscietra caviar.
Additionally, the restaurant will launch a new lunch menu in March, available on Fridays and Saturdays. The menu will feature Italian dishes with a focus on seasonal ingredients.
