This summer, the highly anticipated Sushi Kissho is finally opened at Raffles. Led by Executive Chefs Hironori Satake and Norihisa Maeda, each visit to Sushi Kissho by Miyakawa promises an exclusive experience, where service is attuned to the preferences of every guest. At Sushi Kissho by Miyakawa, the art of sushi transcends sustenance; it is a celebration of the profound connection between nature, tradition, and the human spirit. We are invited to embark on a gastronomic journey that transports us to the very heart of Japan, guided by the masterful touch of one of the world’s most highly renowned sushi chefs.

With over 35 years of experience in top sushi establishments across Tokyo and Osaka, Chef Hironori Satake has earned a stellar reputation for his precision and innovation in crafting exceptional sushi. He brings his wealth of expertise to delight diners with Chef Masaaki Miyakawa’s seasonal omakase menu, sourced meticulously with ingredients from the finest legacy growers and generational fisherman in Japan. Having honed his skills under the tutelage of Master Chef Miyakawa, Chef Satake’s journey includes notable roles such as Head Chef at Sushi Shin by Miyakawa and Head Chef at Sushi Ukiyo. His commitment to utilising the freshest ingredients at their peak ensures a constantly evolving and delightful dining experience. 

Sushi Kissho by Miyakawa embodies the ethos of wabi-sabi, the Japanese aesthetic philosophy that cherishes the beauty found in simplicity and imperfection. The restaurant’s interiors are thoughtfully designed to reflect this principle, creating a serene and harmonious atmosphere that resonates with the soul of traditional Japanese culture. The intimate dining space features an authentic 10-seat counter setting – crafted from 300-year old Kiso Hinoki Cypress – where lucky few can witness the meticulous artistry of the team up close, fostering a deep connection between the diner and the culinary experience. Additionally, a 10-seat private room offers a secluded retreat for those seeking an exclusive and personalised dining encounter.

Sushi Kissho by Miyakawa also offers a curated selection of rare and premium sake, including four acclaimed labels such as Kokuryu Crystal Dragon, Tatenokawa 33% Junmai Daiginjo, Mutsu-Hassen V1116 Junmai, and Hakurakusei Junmai Ginjo. Additionally, the Wa8 private label sake, a collaboration between Sumikawa Shozo Brewery and Wa Creations, is exclusively available at select restaurants including Sushi Kissho by Miyakawa. Crafted with meticulous detail, the junmai daiginjo sake features elegant labels by acclaimed artist Yasumichi Morita, showcasing exceptional craftsmanship and quality.
