Highlights include Avruga Caviar and Eggplant Blinis, which pairs the tender, mild, and earthy sweetness of smoked eggplant with the explosive umami characteristics of caviar, contrasted with blinis that layer various textures for a perfect combination. Inspired by Southeast Asian flavours, Crab Cake Pâte à Choux with Coconut Lime mixes the citrus and aromatic wonders of coconut lime and lemongrass with savoury delight of crab meat and paste.
