To celebrate World Oceans Day on June 8, the French-inspired restaurant Brasserie located at The Parisian is offering a new specially designed dinner menu from June 6 to 16, highlighting sustainable seafood.
Following a campaign initiated by the Hong-Kong Sustainable Seafood Coalition, which has already involved numerous leading restaurants and supermarkets in Hong Kong and Macau, this new menu from Brasserie aims to minimize the burden of seafood demand on the environment through good sourcing practices, as well as to raise awareness among gourmets.
“Sustainability is embedded in all elements of our food and beverage operations, from the selection of sustainable food with credible certifications to menu design,” the senior vice president of Food and Beverage Operations at Sands China, Tom Connolly, said.
