Autumn is the perfect time to enjoy hairy crab. This week, Wynn invited Chef Zhang Wan Li from Shanghai’s Cheng Long Hang, a renowned hairy crab distributor and restaurant which has held a Michelin one-star rating for four consecutive years, to collaborate with Chef Tam Kwok Fung, the Executive Chef of Wynn Palace’s brand-new conceptual Cantonese restaurant, Chef Tam’s Seasons.
Blending the flavors of the Jiangsu-Zhejiang region with Cantonese cuisine, they offered a fleeting taste of autumn’s finest. Established for over 60 years, Cheng Long Hang is a household name among foodies as it runs its own farm to ensure high-quality supply. Specialising in Jiangsu’s finest hairy crabs, they meticulously select the best seasonal ingredients and showcase unique flavours of the Yangtze River Delta region. With years of experience in curating crab feasts, Chef Zhang has also served as one of the head chefs curating the Michelin Guide Shanghai gala dinner.
Revered around the world for his award-winning Cantonese cuisine, Executive Chef Tam Kwok Fung has led his restaurants to international honours such as Michelin stars and placement on Asia’s 50 Best Restaurants. He was honoured with the “Chef of the Year” award from the Black Pearl Restaurant Guide in 2023. At Chef Tam’s Seasons, a brand-new conceptual restaurant inspired by the 24 solar terms of traditional Chinese wisdom, he revitalises Cantonese cuisine by matching global ingredients with contemporary culinary techniques, complete with a food and nourishment philosophy that pays homage to seasonality.
