Italian truffles featured in seasonal menu at The Manor

The Manor at The St. Regis Macao is presenting a limited-edition six-course menu featuring the rich, earthy flavors of Italian truffles.
Crafted by Executive Sous Chef, Michele Dell’ Aquila, the special ‘Diamonds of the Kitchen’ six-course set dinner menu comprises a selection of dishes showcasing the finest white and black truffles from Piedmont.
“We haven’t referred to the truffles ‘diamonds’ by accident – the menu has been designed to elegantly highlight the unmistakable flavors of the best white and black truffles in the world the same way a gem is the focal point of a piece of jewelry,” Chef Michele said.
Highlights of the ‘Diamonds of the Kitchen’ menu include Blackmore Waygu Beef MS9 carpaccio served with umeshu and yuzu jelly, foie gras torchon and dressed with shavings of white truffle, as well as a choice of classic Northern Italian comfort food – house made egg tagliolini with Bordier butter, porcini mushroom and white truffle or Acquerello risotto with gold foil, artichoke, Japanese mushroom and white truffle.
Guests can elevate their dining experience further with a specially curated wine pairing menu that features a carefully selected range of premium wines from Italy designed to bring out the decadent flavors of the truffles in the dishes.
