TASTE OF EDESIA | The unspoken onion

Krug has always lived up to its reputation as the first and still unique champagne house to create only prestige champagne every year since its foundation. Individuality, the art of understanding that every plot is in itself a single ingredient, is at the heart of the House of Krug’s savoir-faire. From the humble potato in 2015 and the simple egg in 2016; the protean mushroom in 2017 and sundry fish in 2018, the enticing pepper in 2019, and now, the unspoken onion in 2021.
In the sixth edition of the Krug x Single Ingredient programme, Krug once again explores the passion, creativity and delight that a single ingredient can inspire. In 2021, the House of Krug continues its exploration of unexpected food pairings and brings together 11 Krug Ambassades Chefs from 9 different countries who have taken inspiration from the House’s unique approach to Champagne creation, unleashing their imagination on the familiar onion.
The unspoken onion exists as a key component of almost every fundamental recipe from stocks, sauces, and stews, to baked goods and roasts. Its multifaceted expressions marry both the fullness of flavours and aromas of Krug Grande Cuvée and the elegance and boldness of Krug Rosé. The onion can be sweet, savoury, pungent, and aromatic; roasted, grilled, pickled, caramelised, battered, and deep-fried; sliced thin or chunky, served cooked or raw – making it one of the most versatile ingredients to ever exist in the culinary arts.
The world of onions is a culinary treasure trove of possibilities. White onions, red onions, sweet onions, shallots, leeks, or green onions – onions have surely exercised their enticing appeal on the Krug Ambassades, who have made this remarkable ingredient the star of their respective dishes. The resulting creations match beautifully with both Krug Grande Cuvée and Krug Rosé and the unexpected spirit of the House of Krug.
