Corporate Bits | Sands presents hairy crab seasonal menu

Steamed Whole Shanghai Hairy CrabThree restaurants at Sands Resorts Cotai Strip Macao and Sands Macao are offering special seasonal menus featuring Shanghai hairy crabs in a promotion that started yesterday and will continue until November.
The crabs will be featured on the autumn menus of the hotel group’s “Dynasty 8”, “Golden Court” and “Canton” restaurants, the latter of which is offering a hairy crab set menu featuring six dishes created by chef Mak Wai Ming.
Mak Wai Ming is an award-winning chef with nearly 40 years of professional culinary experience. He has participated in a number of culinary competitions in Macau and Hong Kong, and has won awards such as the 2011 GHM Best Chef Award.
The hairy crab a-la-carte menu features steamed “Yang Cheng Hu” hairy crab, crab coral abalone dumplings in superior broth, and braised Chinese spinach with Parma ham and crab coral, among other dishes.
Shanghai hairy crabs, also known as Chinese mitten crabs, are a delicacy in Shanghai cuisine and eastern China. They are prized for their crab roe, which ripens in females during the ninth lunar month.
Crabs, which are considered by the Chinese a ‘cooling’ dish because of their energizing effect on the body, are normally accompanied by a ‘warming’ drink such as Shaoxing rice wine or ginger tea.
The “Canton”, “Dynasty 8” and “Golden Court” restaurants are located in the Venetian Macao, Sands Cotai Central, and Sands Macao, respectively. The seasonal offer at “Canton” and “Golden Court” will last until November 30, while the “Dynasty 8” menu will be available until November 15. Staff reporter
