Dinner among the clouds

Lai Heen, the highest Cantonese restaurant in Macau located at The Ritz-Carlton, sits proudly atop the city with its delicate and classic Chinese vessels and beautiful ceramic tile décor. The intimate and exclusive atmosphere, paired with personalised service, offers guests the opportunity to embark on an unparalleled and luxurious culinary journey. For gourmands seeking to elevate their culinary experience, Lai Heen offers an eclectic menu of wines and spirits, including a rich French Bordeaux selection and a best-in-class Portuguese wine cellar. 

Additionally, guests can choose from an extensive selection of premium-aged Pu Erh tea.

Lai Heen has achieved the One Star title for the seventh consecutive year in the recently released Michelin Guide Hong Kong and Macau 2023, recognising its culinary excellence. To celebrate this accolade, The Ritz-Carlton, Macau’s long-serving Chinese Executive Chef, Jackie Ho Hon-sing, honours the authenticity of Cantonese cuisine while exploring innovative possibilities with a new limited-time menu.

The Michelin Star’s Menu is a grand showcase featuring a string of masterpieces that helped Lai Heen earn and keep its highly-coveted Michelin Star for seven years. The journey starts with a trio of umami-packed appetisers, featuring Chilled Abalone Marinated in Fermented Rice Wine, Crispy Alaskan King Crab Rolled with Coconut, and Marinated Jellyfish with Passion Fruit, before moving on to the comforting Double-boiled Superior Fish Maw Soup with Pearl Oyster. The luxurious Steamed Tiger Prawn with Egg White Topped with Superior Caviar is delicate and flavourful, with a good balance between umami and subtle elements. The Pan-seared French Quail Fillet with Pearl Onion in Port Wine Sauce is a unique Macau-Portuguese specialty demonstrating the chef’s culinary ingenuity. Finally, three distinct desserts including Kiwi and Mango Panna Cotta, Sweetened Pumpkin Dumpling with Egg Custard, and Baked Lotus Seed Paste Cake with Nuts round up the meal on a sweet note.
