Finesse light whipping cream launches for health-conscious market

Elle & Vire, a French cream manufacturing company, has launched its “Finesse Light Whipping Cream” (Crème Finesse) with a reduced fat content of 25% to meet consumer demand for healthier products in Macau.

The company partnered with Angliss Macau Food Services Limited and chef Mandy Siu, the brand ambassador, who crafted a series of five desserts with the new whipping cream to showcase its versatile use and stability.

The desserts in the series include “Crème d’Anjou,” “Granny Smith Apple Yuzu Mousse Cake,” “Matcha Pumpkin Seed Entremets,” “Coconut Blancmange (Sweet Potato and Pear),” and lastly, “Grilled Vanilla and Pecan Flan.”

Chef Siu, speaking on the difference between regular whipping cream and the new launch, said: “Compared to the usual 35% fat cream, Finesse can whip to about three times its volume. […] I think that because in recent years, consumer demands have gradually shifted towards health, people are hoping for lower calories, while still being able to enjoy desserts without compromising health.”
