The highly iconic Singapore restaurant, Chatterbox, made its grand debut in Macau at MGM MACAU, bringing the vibrant flavours of Singapore to an elevated and modern dining experience.
While rooted in Singapore’s rich culinary heritage, its Macau destination reimagines this legacy for its diners — centered around its world-famous chicken rice and a menu of beloved specialties crafted from time-honored, closely guarded recipes by Chatterbox’s Group Executive Chef Liew Tian Heong.
The interior design of Chatterbox Café at MGM MACAU pays homage to the East-meets-West cultural heritage shared by both cities. Drawing inspiration from European architecture, the space features arched doorways, elegant wood finishes, and mosaic accents that echo the charm of Singapore’s iconic shophouses while embracing the Portuguese design language from Macau’s historical story.
Adding a distinctive artistic layer, the restaurant showcases four bespoke paintings by Singaporean rising star artist Tan Zi Xi, each celebrating a signature dish – Singapore Mandarin Chicken Rice, Lobster Laksa, Singapore Chicken Curry, and Signature Coconut Ice Cream.
What’s more, these artworks creatively fuse the restaurant’s key ingredients, such as garlic bulbs, chili, chicken, and coconut, together with elements from Macau’s native biodiversity, including the symbolic lotus flower, and the black-faced spoonbill and heron from the city’s serene wetlands, blending Singaporean flavours with Macanese elements through whimsical compositions.
To complement the bold flavors of the menu, Chatterbox Macau offers a curated selection of nostalgic beverages – from Milo Kopi and Pandan Café Latte to Grass Jelly Drink – each crafted to evoke the comforting tastes of Southeast Asia and transport guests to the vibrant vibe of Singapore.
MDT’s top pick from the menu is the chicken rice. A true classic, this is the very first dish served in 1971 when Chatterbox was founded.
The recipe has evolved over time but remains true to tradition. Each chicken is gently simmered in aromatic stock, then steamed to lock in its richness. It is served boneless with jasmine rice cooked fresh and a warm soup infused with chicken essence and aromatics, accompanied by Chatterbox’s legendary house- made chili for a timeless taste of Singapore.
