This week, St. Regis Macao had a unique collaboration between The Manor and Heimat by Peter Find for a two-day exquisite dining indulgence. Fusing German cuisine with locally inspired elements, Chef Find offered a four-course set lunch that celebrated a visionary blend of gastronomy.
Born in Bersrod, Germany, Chef Find began his culinary career in 1984 and has since garnered a wealth of experience in haute cuisine over the last 30 years. His restaurant in Hong Kong – Heimat, which translates to ‘homeland’ in German, is modern approach to traditional dishes which have been elevated and refined to match his vision of what German cuisine should look like in the 21st century.
Chef Find brought his exemplary skills to The Manor for An Exquisite Dining Indulgence with lunch menu highlights including the Geräucherter Hering, Rote Bete and Dill – smoked herring with beetroot, sour cream, dill, and crispy rye bread; as well as the Kohlrouladen (Tacho) – a Macanese version of a traditional Portuguese stew. However, out of all the dishes, Chestnut Soup with Black Truffle was a favorite of ours.
For the dinner menu, exquisite dishes included the Heimat signature Frankfurter Grüne Soße – Brittany blue lobster with a 63-degree egg and the Frankfurter seven herbs sauce; the Käse Spätzle, Weißer Trüfel – refined German hand-shaved spaetzle with white truffle and Allgäuer mountain cheese foam; as well as the Zwiebelrostbraten – a flavorful prime beef sirloin with onion in three ways.
Both menus were paired with decadent German wines such as Dr. Loosen Graacher Himmelreich ‘Alte Reben’ Riesling or the Schloss Reinhartshausen Spätburgunder Trocken red wine for a bespoke gastronomy experience.
