The Guardian: African chicken is local favorite

The Guardian has designated “Macanese” African chicken as the MSAR’s favorite dish, in a new article exploring the culinary traditions and history of the territory.
African chicken may or may not be “Macau’s best-loved dish,” but, according to the London newspaper, it represents the city’s culinary heritage.
The chicken serving is covered in a peanut, tomato and chilli sauce, sometimes sprinkled with paprika, and usually served with bread, potatoes or riz à la tomate.
The dish imbues chicken from the continent of Africa, spices sometimes from India and southeast Asia, with a general European style of preparation – all concocted, according to some, in Macau.
According to The Guardian, there is no single account of the origin of the dish. While some say that it has been passed down through Portuguese families for centuries, others contend that a local chef, by the name of Americo Angelo, devised the dish as late as in the 1940s, using spices that he sourced from a trip to the colonies.
