An unparalleled experience for art and spirits connoisseur is now taking place at MGM COTAI. With continuous efforts in bringing international and world-class experience to guests near and far, MGM and the iconic spirits brand Hennessy, interweave to present an experiential pop-up, “Hennessy X.O x Kim Jones”. At the same time, Imperial Court at MGM MACAU proudly presents the exclusive 8-course “The Refined Indulgence Pairing Menu,” delivering a one-of-its-kind gastronomic experience with the iconic cognac for all gourmets and to contribute to the city’s gastronomic kaleidoscope. 

Chef de Cuisine Homan Tsui serves enticing Cantonese dining traditions with a modern twist, focusing on the essence of Lingnan culinary culture, which are seasonality, balanced seasoning and focus on the original flavours of ingredients. The 8-course menu with delicacies of enticing classic Lingnan culinary craftsmanship brings forth the timeless elegance of Hennessy’s cognac. 

Highlight on the menu includes Braised partridge porridge with bird’s nest and Yunnan ham. Not only a nostalgic Cantonese dish, it is also a porridge-like soup dish commonly served for children and elderly back in the days. The hearty broth concentrates the essence of the partridge in the form of slow cook, while the texture is further enhanced by the starchiness from the yam and the nutritious minced breast, complete with a delicate touch of bird’s nest on top. 

Seafood lovers will be delighted with the Steamed crab claw with glass noodles and Hua Diao rice wine. Located in the mouth of the Pearl River, Ben Wan (本灣) is a brackish water junction which makes the area rich in seafood. Chef Homan chooses fresh meat crabs from Ben Wan and only the crab claws are used for the dish. Then it is steamed with Huadiao wine to bring out the freshness and sweetness of the crab meat itself. The springy glass noodles (Chen Cun Fen) which is freshly made daily, absorbs the essence of Huadiao wine and crab juice, is the highlight of the dish. Pairing with Hennessy XO, the cognac showcases its complex bouquet of rich spices, dried figs and sweet tobacco, interacting with its hints of savory notes and sweet spices.
