Executive chef Tam Kwok Fung, who has recently taken the helm of Wing Lei Palace at Wynn Palace Cotai, introduced a new menu that features innovative Cantonese dishes that also preserve the traditional culinary traditions of the region.
Honoring the heritage of Cantonese cuisine, Chef Tam’s newly crafted menu features a selection of classic Cantonese dishes such as roasted goose with plum sauce where the Magang goose, one of the four most well-known geese from Guangdong is roasted with lychee wood, Wynn notes in a press release.
Chef Tam, who is a native of Shunde, Guangdong, also introduced a special dish from his hometown called braised fish broth with fish maw and vegetables. Fresh grouper forms the fish broth blended together with fish maw, luffa, fungus and for the final touch, mandarin peel is mixed in to give the soup an added richness. Also, one of Chef Tam’s masterpieces is the crispy sea cucumber stuffed with minced shrimp.
Sands volunteers for clean-up activity
Around 60 volunteers from the Sands Cares Ambassador program helped to clean up Hac Sa beach yesterday morning, where they disposed of branches, rubbish, and other debris, and helped shovel displaced sand back onto the beach.

Sands China’s relief efforts, which began before Sunday’s storm, include initiatives such as delivering meal boxes and visiting elderly residents who live alone to tape windows shut to minimise storm damage. The company’s recovery work remains ongoing, and is part of Sands Cares, the global corporate citizenship programme of parent company Las Vegas Sands Corp.
