This time, Aji joins hands with winner of The Best Chef Top 100, the record – breaking culinary superstar Chef Daniel Calvert infused with elegance and artistry in French culinary philosophy, curated a special degustation menu of Sézanne, a two-MICHELIN-starred French restaurant which had earned second place in the Asia’s 50 Best Restaurants 2023.

The aesthetics of French gastronomy has always been fascinating. This degustation menu features an innovative interpretation of stellar creations crafted with seasonal Japanese ingredients in a delicate French style, including the Beluga Caviar with Avocado and Sudachi, French Pigeon marinated in Yellow Wine from Jura, and Crispy Kinki Fish with Oita saffron.

The Beluga Caviar with Avocado and Sudachi is definitely a must-try, the caviar-topped avocado pear mousse is soaked in the bonito broth. The creaminess of the avocado and the acidity of the Japanese citrus sudachi balance the salinity of the caviar and elevate the flavors as a whole. Another highlight is the Miyazaki Mango with Shortbread Crème Chantilly, a surprising dessert crafted with chef’s favorite Miyazaki mango, which is marinated in rum and hidden underneath the top layer of flesh is a frozen citrusy meringue, demonstrating the ultimate fusion of ingredients, aesthetics and flavors.
