A Gastronomic Journey with the Master Chef: Nordic-Japanese Degustation Menu

The Thai culinary scene has been seeing a wave of new generation chefs rising in recent years. One of the most sought-after rising stars, Chef Peter Kasamvilas, is debuting an exclusive degustation menu in Macau this July at MGM COTAI, featuring his signature specialties.

Being the youngest finalist in the renowned TV show MasterChef Thailand, Chef Peter Kasamvilas is known for his innovative Nordic-Japanese approach and advocacy for natural and healthy eating. His ingredient-focused culinary philosophy captures the essence of fresh, seasonal and sustainable produce from the origin with impeccable craftsmanship and refined simplicity. With the use of Koji, a fungus used for fermentation and various culinary purposes, which he calls it the “magic mold”, raw ingredients are transformed into new forms with new flavors. It is like a secondary ingredient that elevates the natural taste, creating more sophisticated flavors from fresh produce.

The eight-course degustation menu features the master chef’s signature creations, and the Giant Trevally is one of the highlights. Freshly caught in Phuket, the fish is prepared using a Japanese method called “ikejime” that preserves the flavors and texture, leaving the flesh with a delicate, firm texture and a clean taste. The Giant Trevally Tartare is paired with pickled apple, kombu cream and dill oil as a perfect starter. The gastronomic journey continues with a few exquisite specialties featuring prawn, cod, lamb, wagyu and more.
