Asia’s first Nikkei cuisine restaurant in town

T-2-SnacksMGM China announced yesterday that it would bring to Macau the first Nikkei cuisine restaurant (Peruvian-Japanese fusion) in Asia. The collaboration with Chef Mitsuharu Tsumura for this project was revealed in a ceremony held at the MGM Macau’s Aux Beaux Arts restaurant.
At a time when the trend of Nikkei cuisine is emerging worldwide, this unusual way of preparing Peruvian traditional ingredients with the use of Japanese cooking techniques – which chef “Micha” helped to bring to the spotlight – will be the highlight of the new restaurant. The venue will go by the name AJI, which literally means “chili” in Spanish and “flavor” in Japanese, which is also, as chef “Micha” explains, an essential ingredient for 99 percent of all Peruvian dishes.
Featuring a ceviche bar, hibachi grill and a Pisco bar, while also offering a selection of the best sake, shochu and fine wine, AJI Restaurant promises to be a new addition to Macau’s culinary scene.
Talking to the journalists, chef “Micha” believes this will be a very successful project. He also said that he will not be “shy” in presenting other exotic delicacies from Peru to Macau guests – like, for example, the traditional roasted Guinea Pig.
