With the dexterity of profound taste profiles, the Sichuan cuisine brings flavors beyond the public’s perception of hot and numbing. The menu at Five Foot Road, led by Chef Yang Dengquan, allows guests to dive into its diversified 24-flavor profile with numerous classic Chengdu dishes.
With the complexity and long-lasting fragrance, Poached Chinese Cabbage in Bouillon was once a staple at elaborate imperial banquets during Qing dynasty and upscale dinner parties in Chengdu back in the old time. While it might be simple in appearance, its signature clear, light chicken broth with a strong aroma is known as the epitome of Chengdu cuisine.
Stewed Duck with Matsutake Mushroom, Ginger, Ham and Seasonal Vegetables is another sacred dish recreated by Chef Yang, which only a few have access to this age-old recipe originated from Bashu (modern day Chongqing and Sichuan). In this dish, whole duck is de-boned then steamed with vegetal ingredients for hours to form the tender and melt-in-mouth texture and is a wonderful option for young children and elderly.
Refined from the traditional, “household” taste profile that highlights wok-fried items, Chef Yang elevates the Wok-fried String beans with Minced Pork with an additional layer of earthy flavor by adding in the prized Matsutake Mushroom, directly imported from Yunnan, for its distinctive aroma.
