Taking inspiration from America’s relaxed West Coast lifestyle, award-winning Chef Graham Elliot cooks up a variety of contemporary dishes that capture the spirit of California and neighboring western produced flavors, while taking inspirations from local favorites.
His only restaurant outside the U.S, located at MGM Cotai, Coast is set to unveil its new menu soon.
Chef Graham recently visited the city, curating its new set of contemporary cuisine to locals and visitors in Macau.
In a New Menu Tasting Dinner, Chef Graham gave a sneak peak of its latest menu, presenting the restaurant’s Green Peas and Mint Risotto, of which the chef held a cooking demonstration with the press.
Following the risotto, Dry-rubbed Skirt Steak with Black beans, Avocado & Tomato, ending with Key Lime Pavlova with Lime Curd, Lime Sorbet, Graham cracker were served.
Chef Graham implied he plans to keep adding new dishes depending on the season.
According to the restaurateur, Coast has been busier than what they had initially expected.
“It’s actually been busier than what we expected because we’re a restaurant that serves breakfast, lunch, tea and dinner. We’re open all the time and we need to make sure that we appeal to both locals and the people coming in staying at the hotel,” he said.
“Right now we’re going to change the menu. Some more sandwiches, burgers, new desserts [that are] a little more fruity, acidic because that’s what we have seen the people come in and eat,” the chef added.
The television personality and cookbook author also noted that developing the menu is based on the cuisines and ingredients that he get inspired about, focusing more on the local palette.
“What I’ve learned is that everyone loves shellfish [so] we put more of that on the menu. […] They love platters to share,” he added.
Currently, Coast offers a selection of dishes including specialty pizza, fresh baked bread, salads, grills and other comforting delights for breakfast, lunch or dinner.
