Last night I had dinner at Galaxy Macau’s 8½ Otto e Mezzo Bombana, which just received a one star rating from The Michelin Guide Hong Kong Macau 2016. I must say a simple dish of scrambled eggs with white truffle and a limoncello vanilla ice cream made me a very happy woman. The restaurant’s month-long à la carte white truffle menu, available from 1 Nov to 15 December, features fresh Alba White Truffle with no artificial truffle oils, powders or flavorings. The selections include the Egg in Raviolo with Ricotta Cheese and Spinach, Hazelnut Butter and Alba White Truffle; Homemade Tagliolini with Butter, Parmesan and Alba White Truffle; and White Truffle Ice Cream with Chestnut, Panettone and Alba White Truffle.
What’s more exciting is that in the middle of November, the restaurant is presenting an exclusive first-ever 6 course gala dinner menu specially crafted by Three Michelin Stars Chefs Umberto Bombana and Enrico Cerea, featuring the true Italian treasure – Alba White Truffle.
8½ Otto e Mezzo Bombana is the vision of Chef Umberto Bombana, lauded as “Worldwide Ambassador of the White Truffle” by the Piedmontese Regional Enoteca Cavour.
Chef Bombana has earned a three Michelin star rating for his celebrated Italian restaurant 8½ Otto e Mezzo Bombana in Hong Kong and is widely hailed as the best Italian chef in Asia. This November, he is working with fellow Three Michelin Star Executive Chef Enrico Cerea – a culinary enthusiast since a child who grew to perfect his technique over the years at his family’s famed Da Vittorio restaurant in Bergamo, Italy.
The “Three Michelin Star Chefs Gala Dinner” encompasses six courses where each presents a delectable exploration of the finest tastes of Italy through the season’s freshest ingredients. Highlights from Chef Bombana include: Confit Abalone Carpaccio and Calvisius Elite Caviar, Poularde de Bresse and Alba White Truffle; from Chef Cerea: Alba White Truffle Cappuccino, Gnocco filled with Ricotta, Cheese Fondue and Alba White Truffle. An optional wine pairing is available with a selection of fine wines including Champagne, Barolo and Marsala which are carefully chosen to pair with each course.
