The “Gastronomic Journey with Star Chef” series is back with #AjiTouch!

In line with Macau’s status as the ‘Creative City of Gastronomy’, MGM launches its first stellar line up for its ‘Gastronomic Journey with Star Chefs’ series of 2025, featuring Ricardo Chaneton, Chef-founder of Hong Kong’s one-Michelin-starred Restaurant MONO, ranking 27th among Asia’s 50 Best Restaurants 2024.

From February 20 to 22, Chef Ricardo will bring his culinary mastery to Aji at MGM COTAI. In this elegant Asian Bistronomy setting, guests will indulge in a special menu featuring modern Latin American cuisine, meticulously crafted with French artistry. Expect an extraordinary gastronomic feast with signature dishes including the Fabien D’eneour  Plounéour-Menez Pigeon, a masterful creation accompanied by a complex sauce infused with over twenty Latin American spices, as well as Chef Chaneton’s iconic Mexican Purple Corn Infladita, which is enhanced by the umami-rich seaweed pesto sauce from chef’s secret recipe.
