Bold Flavours with Tradition

Year of the Horse is coming and MDT has a chance to savour W Macau’s festive dishes at DIVA. The venue invites guests to embark on a forward – looking adventure defined by bold energy and ambition with specially curated dining experiences, featuring limited – time menus celebrating the Chinese New Year period , each with distinct offerings that blend traditional elements with contemporary culinary techniques.

Chef Kwok – Hung Cheng is presenting a Chinese New Year menu that blends contemporary culinary techniques with traditional Cantonese roots, to boldly welcome the Year of Horse, showcased through both à la carte and set menu options. Guests are invited to savour a curated symphony of flavours through seasonal ingredients like fresh premium seafood, together with culinary craftsmanship that balances textures and subtle nuances.

Chef Cheng’s festive set menus are thoughtfully curated to suit gatherings of various sizes, with each menu offering a unique selection of dishes.

The 4-person set menu includes Star Grouper Fillet and Winter Melon with 15-year Huadiao Rice Wine and Braised Rice with Abalone and Roasted Goose, spotlighting elegant flavors and precise technique.

The 6-person set menu expands the experience with elevated offerings like Crispy Chicken Stuffed with Glutinous Rice, and Baked Lobster with Garlic and Lily Bulb, adding layers of richness and comfort.

For larger celebrations, the 10-person menu features an even more luxurious spread, including Steamed South Australian Lobster and Egg White with Huadiao Rice Wine, Steamed Star Grouper and Jinhua Ham, Prosperity Poon Choi, and the Stewed Bird’s Nest, Lily Bulb, Papaya, Red Dates Paired with Pan-fried New Year Rice Pudding offering the perfect ending to the meal. Guests who choose the 10-person set will also enjoy complimentary access to a private dining room for an enhanced, intimate experience.

DIVA’s signature Poon Choi also brings guests together to share a hearty, communal feast that celebrates unity, abundance, and the joy of the New Year.

For those seeking more flexibility, the à la carte Prosperous Gallop menu offers a wide selection of seasonal specialties to choose from. Celebrate with symbolic dishes such as Prosperity Toss Abalone, Braised Champion Pork Knuckle, and Steamed Chicken, Jinhua Ham, Mushroom, each rich in cultural meaning and festive spirit. 

Chef Cheng will also introduce a sophisticated reinterpretation of a beloved classic with Bloom and Boom: Coconut & Olive Nut Rice Pudding. Featuring buttery richness and delicate crunch of olive nuts, adding depth and texture to each bite , this elegant treat is perfect for gifting or indulging in seasonal delights.
