Kam Lai Heen to host Macau-Chengdu four-hands dinner


Kam Lai Heen at Artyzen Grand Lapa Macau will host a four-hands dining event Sept. 4-5, bringing together Executive Chinese Chef Johnny Sin and guest chef Ares Shi for an eight-course dinner highlighting Cantonese and Sichuan flavors.
Held under the theme “Grace from Macau, Fire from Chengdu,” the dinner will combine Cantonese culinary techniques with the bold flavors and spices associated with Sichuan cuisine.
Sin, who has led Kam Lai Heen since 2022, will present dishes reflecting the restaurant’s “Cantonese Heritage Reimagined” philosophy. One featured dish is Handcrafted Blue Lobster Siu Mai with Huadiao Wine Cream Sauce.
Shi, who was born in Sichuan and raised in Guangdong, is the chef and founder of Enco and Chaleur and previously trained at the Culinary Institute of America and L’Arome Pastry School.
Shi appeared among the top 100 contestants on Tencent Video’s “The Divine Dish” in 2025. His Roasted Wagyu Beef with Sichuan Chopped Chilli, featured in the competition, will be served during the Macau event.
